EASY PASTA SALAD 

A one pot filling salad that not just full your hunger but also provides wellness and nutrition to the body. An ideal salad recipe for your brunch parties, this pasta salad is a must make in summers.

Ingredients

2 Cups Penne Rigate , Cooked
1 Cucumber , Sliced
1 Red Onion, Sliced
2 Grape Tomatoes , Halved
2 Clove Garlic, Chopped
1/2 Cup Green & Black Olives
100 Grams Feta Cheese
4 TBSP Olive Oil
1 TBSP Lemon Juice
1 TBSP Fresh Coriander, For Garnish
- Salt & Freshly Crushed Black Pepper To Taste

Method

 
  1. Cook Penne Rigate Pasta as directed in the pack. Drain and keep aside.
  2. In a small bowl, add Olive Oil, garlic and lemon juice, mix well and keep aside.
  3. Take a large salad bowl add cooked pasta, cucumber, tomatoes, onion, green olives, black olives, cubed feta cheese and mix well.
  4. Season with salt and pepper and pour in the olive oil dressing all over the salad.
  5. Give a quick toss to the salad and refrigerate for sometime before serving.
  6. Garnish with some minced feta cheese and freshly chopped coriander and serve cold.
