brilliant breakfast bars 

Make these decadent and healthy seeded breakfast bars with Del Monte pumpkin seeds, Del Monte sunflower seeds, oats, sesame seeds, almonds, raisins, cashews, cinnamon, vanilla, honey, and dark chocolate.

Ingredients

80 Gram pumpkin seeds
65 Gram sunflower seeds
150 Gram oats (quick-cooking)
35 Gram black sesame seeds
40 Gram almonds
40 Gram black raisins
40 Gram cashews
28 Gram butter
1/4 TBSP ground cinnamon
1/2 TBSP vanilla extract
130 ml pure honey
100 Gram melted dark chocolate (optional)
- A pinch of salt

Method


  1. Take a medium-sized saucepan, and melt some butter on medium-low heat.
  2. Once the butter melts, take the pan off the heat and add some honey and vanilla.
  3. Add all the dry ingredients - oats, pumpkin seeds, sunflower seeds, black sesame seeds, almonds, cashews, raisins, cinnamon and salt. Mix until everything is well combined and moist.
  4. Take an 8x8 inch square pan, line it with parchment. Put and press this mixture into the pan as tightly as possible. Make sure you really press the mixture in otherwise the bars will break when you try to cut through them.
  5. Let the bars set in the fridge for a few hours.
  6. Once set, remove from the pan and cut into bars using a very sharp knife. You may drizzle the bars with some melted dark chocolate for an antioxidant boost.
  7. Store the bars wrapped in parchment paper in the fridge inside an airtight container.
