funky monkey banana bread 

Make this delicious and healthy seeded banana bread with brown butter, caster sugar, vanilla extract, eggs, all-purpose flour, baking powder, baking soda, cinnamon, ripe bananas, and Del Monte chopped sunflower seeds. 

Ingredients

113 Gram Brown Butter (Use 150 g of regular butter to make brown butter)
135 Gram caster sugar
1 TBSP Vanilla Extract
2 large eggs
220 Gram All-purpose flour
1 TBSP Baking Powder
1/4 TBSP baking soda
1/2 TBSP ground cinnamon
40 Gram chopped sunflower seeds
320 Gram mashed ripe bananas

Method


  1. Take some butter in a saucepan and keep stirring it on medium heat till you see the changes in its color. When it will smell nice and nutty, keep it aside to cool down.
  2. Grease and line a 7x3.5 inch loaf pan. Preheat your oven to 175 C.
  3. Mash some bananas in a medium-sized bowl, and set aside.
  4. Blend the cooled down brown butter and caster sugar for 2 minutes till it turns light and fluffy, then add the eggs one by one, mix it well after each addition and then add the vanilla extract.
  5. Now add the mashed bananas and mix well.
  6. Sift in the flour, cinnamon, baking powder and baking soda and fold it gently into the butter mixture.
  7. Halfway through the mixing, add the chopped sunflower seeds and fold until you no longer see any dry flour. Pour the batter into the prepared pan, sprinkle some more sunflower seeds on top for extra crunch.
  8. Bake at 175 C for about 55-60 minutes. If the banana bread is browning too much, cover the top loosely with some aluminum foil. To check if it is baked through - a skewer inserted in the middle should come out clean. Let the banana bread cool completely before devouring.
