RED BEANS AND VEGETABLE SALAD 

Make this delicious and healthy red bean and vegetable salad with red kidney beans, cabbage, carrot, capsicum, garlic, red wine vinegar, English mustard paste, and Del Monte extra-virgin olive oil.

Ingredients

1/4 Cup red kidney beans boiled
1/4 Cup shredded cabbage
1/4 cup julienned carrot
1/4 Cup sliced capsicum
2 TBSP red wine vinegar
2 TBSP powdered sugar
1 TBSP minced garlic
2 TBSP Del Monte Extra Virgin Olive Oil
1 TBSP English mustard paste
- Salt To Taste

Method


  1. Combine beans, cabbage, carrots, and capsicum in a deep bowl and toss well. Keep in the fridge while preparing the dressing.
  2. Whisk together Del Monte olive oil, red wine vinegar, powdered sugar, minced garlic, mustard paste, and salt. Taste and add black pepper if required.
  3. Just before serving, pour the dressing over the salad and toss well.
  4. Serve immediately.
