QUINOA POWER SALAD

Quinoa Power Salad is quick to make, healthy, energizing, gluten-free and full of plant-based goodness. A mix of veggies, fruits, seeds and grains, this salad is refreshing and bursting with colours.

Ingredients

1 Cup Baby Spinach
1/2 Cup Cooked Quinoa
1 Cup Strawberry
1 Cup Red Globe Grapes (Cut Into Chunks)
3/4 Cup Blueberries
1/2 Avocado
1 TBSP Chia Seeds
1 TBSP Extra-Virgin Olive Oil
1 TBSP Lime Juice
1 TBSP Honey

Method


  1. Whisk together extra virgin olive oil, lime juice, and honey and set aside.
  2. In a medium bowl, combine spinach, quinoa, strawberries, and blueberries and toss to combine.
  3. Drizzle with the dressing, reserving a little bit of it, and toss again to combine.
  4. Add the sliced avocado and lightly toss.
  5. Drizzle the rest of the dressing on top and sprinkle with the chia seeds.

It can’t get more healthalicious!
