Peach & Pineapple Glazed Chicken Skewers

Make these sweet and tangy glazed chicken skewers with Del Monte pineapples. These barbequed chicken recipe is best served with some tasty dips and refreshing mocktails.

Ingredients

1 Cup Del Monte Pineapple Juice
4 Del Monte Peach Halves, Chopped
3 Tablespoons Oil For Grilling
2 Teaspoon Soy Sauce
2 Garlic Cloves,Finely Minced
1 Teaspoon Siracha Sauce Or Red Chili Sauce
- Salt To Taste
250 Gram Boneless Chicken Cut Into Bite Size Pieces

Method


  1. In a medium saucepan, heat pineapple juice, peach slices, soy sauce, siracha sauce, and garlic. Bring to a simmer. Season with salt to taste.
  2. Allow to simmer on low for about 10 minutes or till it turn thick. Turn off the heat.
  3. Blend the mixture to make a smooth sauce. Transfer to a bowl.
  4. Marinate the chicken pieces in the pineapple-peach sauce overnight or for atleast 1 hour.
  5. Reserve half of the glaze to be used later.
  6. Skewer the chicken pieces with capsicum and onion.
  7. Preheat your grill/barbecue. Brush grill grate with oil.
  8. Place skewers directly on grill grate and cook over medium ame for 6-8 minutes. Turn over and continue cooking another 6-8 minutes.
  9. Slather the chicken with the fruit glaze and continue cooking for another 2-4 minutes until done.
  10. Serve chicken skewers warm with the dip of your choice.
