Mediterranean Salad

Make this healthy and scrumptious Mediterranean salad with Del Monte extra-virgin olive oil, chickpeas, bell peppers, goat cheese, Del Monte pitted black olives, parsley, lemon, garlic, and pepper.

Ingredients

1 cup boiled chickpeas
1/4 cup English cucumber diced
1/4 Cup red bell pepper diced
1/4 Cup yellow bell pepper diced
1/4 Cup goat cheese (or any soft cheese) cut into cubes
1/4 Cup Del Monte pitted black olives
1/4 cup parsley (chopped)
1 garlic clove (peeled and minced)
2 tablespoons lemon juice
1 1/2 tablespoons Del Monte extra virgin olive oil
- Salt and ground black pepper to taste

Method


  1. Combine all the salad ingredients except cheese in a large bowl.
  2. To prepare the dressing, whisk together Del Monte olive oil, parsley, garlic clove, lemon juice, salt, and pepper.
  3. Taste and adjust the seasoning.
  4. Pour the dressing over the salad.
  5. Mix nicely. Add cheese and gently combine.
  6. Serve Mediterranean Salad with pita bread on the side.
