MEATLESS MEATBALLS ON A STICK

Even the non-vegetarians will love these meatless meatballs. Served with some pasta sauce, and pasta on a stick they will make a great addition to any festive party this year

Ingredients

100 gms Del Monte Whole Wheat Spirali
1 tsp Del Monte Olive Oil
200 gms mushrooms, finely chopped
1 tbsp butter
1 Small Onion, Chopped
4 Cloves Garlic
2 Tbsp Parmesan Cheese
1/2 Cup Breadcrumbs
2 tbsp greek yogurt (or strained yogurt)
- Salt and pepper to taste
1 tsp red chilli flakes
1 tsp Italian seasoning
1/2 cup Grated Cheese
some Fresh basil leaves
as needed Del Monte Pizza pasta sauce

Method

  1. In a pan, heat the olive oil. Add the garlic, and fry for a few seconds till golden. Add the onions and a pinch salt. Sauté till translucent. 
  2. Add the mushrooms and cook and stir until liquid from mushrooms has evaporated. 
  3. Add in butter, and cook the mushrooms for another 5 minutes on medium heat, until golden brown. Remove off heat.
  4. In a bowl, add the mushroom mixture, bread crumbs, red chili flakes, parmesan cheese, 2 tbsp. Greek yogurt, Italian season and salt and pepper, to taste. If required, add in another tbsp. of yogurt- mixture should hold when pressed together.
  5. Cover bowl and let mixture rest in the refrigerator for at least 4 hours, or overnight.
  6. Preheat oven to 225 degrees C. Line a baking sheet with parchment paper.
  7. Form small meatballs, rolling the mixture between your hands until smooth.  Arrange on the baking tray and bake for 12-15 minutes.
  8. Meanwhile, boil pasta according to instructions on the packet.
  9. To serve, take 2-3 Spirali pieces of pasta and put threw a toothpick, add a basil leaf and meatball. Serve with pasta sauce.
