Marinated Feta and Olive Skewers 

Make this scrumptious party appetizer with Del Monte pitted black olives, feta cheese cubes, English cucumbers, mint, oregano, and Del Monte extra-virgin olive oil. To assemble the skewers put the marinated olives, cucumber, and feta in bamboo skewers. 

Ingredients

2 TBSP fine chopped garlic
1 TBSP Lemon Juice
5-6 mint leaves fine chopped
1 Cup extra virgin olive oil
200 Gram feta cheese, cut into 1/2-inch cubes
1 cucumber, seeded, and cut into 1/2-inch chunks
8 pitted Del Monte Green Olives
8 pitted Del Monte Black Olives

Method

  1. In a medium bowl whisk together garlic, lemon juice, salt, pepper, mint leaves and olive oil for 2 - 3 minutes. Set aside.
  2. Gently add the feta and olives in the jar with the lid.
  3. Pour the marinade in the same jar. Close with the lid. Gently shake and keep in the fridge for atleast 1 - 2 hours. Or keep in the fridge until ready to serve.
  4. It is recommended to prepare the marinade in a large jar so that it's easy to coat the cheese and olives with the marinade.
  5. To make the skewers, place an olive, then a chunk of cucumber. Gently place a cube of the marinated feta followed by a black olive.
