MACARONI SALAD LETTUCE CUPS

Make these delicious Macaroni lettuce cups with Romaine lettuce, sweetcorn, red chili flakes, lemon, cherry tomatoes, Del Monte Roasted Garlic Mayo, toasted almonds, Del Monte extra virgin olive oil, and freshly cracked black pepper.

Ingredients

4 Romaine Lettuce Leaves
1 Cup Macaroni
1 Cup Boiled Sweetcorn
1/2 Cup Halved Cherry Tomatoes
1/4 Cup Red Chilli Flakes
1/4 Cup Chopped Coriander Leaves
- Juice Of 1 Lemon
1/4 Cup Toasted Almonds, Slivered, With Skin On
1 TBSP Del Monte Extra Virgin Olive Oil
1/2 TSP Salt
1/2 Tsp Ground Black Pepper
1/2 Cup Del Monte Roasted Garlic Mayo

Method


  1. Cook Macaroni in boiling water, for about 8-10 minutes or until cooked. Drain the water and set aside.
  2. In a bowl, toss together the cooked macaroni, sweet corn, tomatoes, garlic mayo, red chilli flakes, lemon juice, slivered almonds, salt and pepper until combined.
  3. In a half of a romaine lettuce leaf, add a cup of the salad and garnish with chopped coriander leaves. Drizzle with extra virgin olive oil. Repeat the same with the remaining lettuce leaves.
