LEMONY RED PEPPER AND ASPARAGUS PASTA SALAD 

This mouth-watering pasta salad is the ultimate dish to serve at any summer party.

Ingredients

1 Red Bell Pepper (Sliced)
1 Yellow Bell Pepper ( Sliced )
1 Onion ( Cut Into Slices )
3 TBSP Del Monte Olive Oil
1/2 TBSP Lemon Zest
2 TBSP Lemon Juice
2 TBSP Honey
1 TBSP Salt To Taste
1/2 TBSP Freshly Cracked Black Pepper
1 TBSP Garlic Powder
2 TBSP Spring Onion Greens (Chopped)
300 GM Del Monte Spirali Pasta
200 GM Asparagus ( Cut Into Pieces )

Method

  1. Heat water in a large pot.
  2. Once it comes to a boil, add 2 tbsp salt and Del Monte Spirali Pasta.
  3. Cook until pasta is done.
  4. Add asparagus just 2 minutes before the pasta is done.
  5. Drain and keep aside.
  6. Heat 2 tsp olive oil in a pan and roast the peppers until slightly charred.
  7. Remove the peppers in a plate and cool.
  8. Mix pasta, asparagus, roasted peppers and onions in a bowl.
  9. Mix Del Monte Olive Oil, lemon zest, lemon juice, honey, salt, black pepper and garlic powder in a another powder.
  10. Pour the dressing over the salad and toss well.
  11. Garnish with spring onion greens.
  12. Serve immediately.
