ACHARI QUESADILLAS 

Bring an Indian twist to this mexican favourite with the Del Monte Achari Mayo. Serve it for snacks or for dinner and watch your family drool.

Ingredients

1/2 Yellow Bell Pepper Thinly Sliced
1/2 Red Bell Pepper Thinly Sliced
1/2 Green Capsicum Thinly Sliced
1 Medium Onion Thinly Sliced
1/4 Cup Sweet Corn
4-5 Curry Leaves
2 TBSP Finely Chopped Coriander
1/2 TBSP Jeera
1/4 TBSP Haldi
1 TBSP Red Chilli Powder
2 TBSP Oil
1/4 Cup Achaari Mayo
2 Flour Tortillas
- Salt To Taste

Method


  1. In a pan, heat oil and add jeera. When jeera begins to pop, add the onions and saute for 30-40 seconds on medium flame.
  2. Then add the bell peppers and cook them till soft.
  3. Add corn and spices and cook for 2 more minutes.
  4. Finally, add coriander and mix well. Turn off the gas.

Assembling the tortilla-

  1. Heat the pan and lightly toast one side of the tortilla.
  2. Then on that side, spread a generous amount of achari mayo and add in the veggie mix in half and fold like a semi-circle.
  3. Heat oil in a pan and place this tortilla and roast both sides till golden brown by gently pressing it
  4. Slice the quesadillas and serve hot.
