crunchy munchy rainbow SALAD

Make this healthy green apple purple lettuce salad with granny smith apples, purple lettuce, English cucumber, onions, yogurt, olive oil, lemon juice, salt, and Del Monte flax seeds.

Ingredients

2 small granny smith apples (sliced thinly)
3 small tomatoes (cut into small cubes)
1 medium English cucumber (cut into small cubes)
2 small onions sliced thinly
1 small purple lettuce (torn into bite-sized pieces)
2-3 TBSP flax seeds
1/4 cup lemon juice
2 TBSP Olive Oil
1 TBSP yoghurt
1/2 TBSP powdered sugar
- a generous pinch of salt and pepper

Method


  1. Make sure all your fresh produce is clean and washed before prepping and adding into a large bowl.
  2. Make the dressing: Take a small bowl and mix the oil, lemon juice, yogurt and sugar using a whisk. Mix it thoroughly.
  3. Drizzle it on the prepped ingredients and add the flax seeds, salt and pepper to taste. Mix using a wooden spoon and use some pressure to mix so all the ingredients can mix in their juices to enhance the flavor.
  4. The salad is ready to be devoured!
