CORN SALAD

Sounds very simple but carries quite a depth of flavour, making it an all-time favourite salad. This corn salad is perfect for BBQs and potlucks; which you are completely welcome to eat with chips. Not to mention, it’s very healthy and refreshing.

Ingredients

1 Can Del Monte Whole Corn Kernels
1/4 Cup Red Onion (Fine Chopped)
1/4 Cup Cherry Tomato (Cut Into Halves)
1 Avocado (Sliced Or Cut Into Small Chunks)
2 TBSP Soft Cheese (Crumbled)
2 TBSP Del Monte Extra Virgin Olive Oil
1-2 TBSP Salt & Pepper To Taste
1-2 TBSP Fresh Parsley (Fine Chopped)
1 lemon (for lemon juice)

Method


  1. Prepare the salad dressing first by combining Del Monte olive oil, lemon juice, parsley, salt, and pepper. Whisk nicely.
  2. Combine corn kernels, tomato, onion and avocado in a bowl. Pour dressing over the salad.
  3. Add cheese, gently toss and serve the corn salad.
