Chifferi Rigati in Savory Egg Custard

Ingredients

2 cups Del Monte Chifferi Rigati
1/2 cup Cheddar Cheese, Grated
3/4 Cup Cream
3/4 Cup Milk
1-2 Green Chilies, Finely Chopped
1/3 Cup Cilantro, Finely Chopped
2-3 Garlic Cloves, Finely Chopped
- 3 eggs With 3 Yolks
- Salt and pepper to taste

Method

 
  1. Preheat the oven at 150 degrees centigrade and boil the pasta as per the packet instructions.
  2. In a bowl, add eggs and egg yolks and whisk well for 2 to 3 minutes.
  3. In a pan, add cream, milk and put it to heat.
  4. Cook until it just starts to steam.
  5. Do not bring it to a boil.
  6. Now add this cream and milk mixture gradually in the whisked eggs and keep whisking until it has blended well.
  7. Do not add cream and milk mixture all at once.
  8. Now place the egg and cream mixture on a double boiler and keep whisking until it starts thickening.
  9. Do not over thicken it.
  10. Take it off immediately from the heat.
  11. Mix garlic, cilantro, green chilies, salt and pepper to the prepared custard.
  12. Mix the boiled pasta into the custard.
  13. Now spoon the pasta custard mixture into the ramekins.
  14. Place the ramekins into a deep tray filled with hot water.
  15. Bake the pasta custard for 30 to 35 minutes or until set.
  16. Take the baked pasta custard out, garnish with some more chopped cilantro and serve with toast and butter on the side for breakfast.
