BEAN SALAD

Bean Salad is a high in protein,refreshing and satisfying salad that can served along with any Indian main course.

Ingredients

1/4 Cup red kidney beans boiled
1/4 Cup shredded cabbage
1/4 cup julienned carrot
1/4 Cup sliced capsicum
2 TBSP red wine vinegar
2 TBSP powdered sugar
1 TBSP minced garlic
2 TBSP Del Monte Extra Virgin Olive Oil
1 TBSP English mustard paste
- Salt To Taste

Method


  1. Combine beans, cabbage, carrots, and capsicum in a deep bowl and toss well. Keep in the fridge while preparing the dressing.
  2. Whisk together Del Monte olive oil, red wine vinegar, powdered sugar, minced garlic, mustard paste, and salt. Taste and add black pepper if required.
  3. Just before serving, pour the dressing over the salad and toss well.
  4. Serve immediately.
