Basil hot & sweet dressing

If you think that making a beautiful, delicious dressing like this Sweet Basil Vinaigrette is difficult, think again! Simply throw all the ingredients except the oil into a blender and let the flavours of Del Monte Extra Virgin Olive Oil and Del Monte Brewed Vinegar add a twist to the greens. Pro tip - It can be stored in the fridge for later use.

Ingredients

2 Tbsp DelMonte Extra Virgin Olive Oil
2 TBSP DelMonte Brewed Vinegar
1 No. Green Chili whole
2 tbsp honey
1/4 Cup Onion (Dice)
1/4 Cup Capsicum (Dice)
1/4 cup Red & Yellow Bellpepper (Diced)
1 cup Lettuce (Hand torn)
2 Tbsp Babycorn (Diced & Blanched)
2 TBSP Broccoli (Diced & Blanched)
1 Tbsp Spring Onion (Sliced)
- Salt To Taste
1/4 TBSP Crushed Black Pepper

Method


  1. In a blender add basil, chili, DelMonte Brewed Vinegar, DelMonte Extra Virgin Olive Oil and blend till smooth.
  2. In a mixing bowl add all the vegetables and pour the blended dressing on it. Adjust seasonings and mix well.
  3. Serve cold garnished with sliced spring onions.
  4. Chef s Tip : After blanching the vegetables keep them in cold water so that it retains its colour and cooking process is stopped.
  5. Variations : You can add grilled chicken to the salad as well.
